
Chocolate Sorbet
The mixture does not include eggs or dairy. Chocolate sorbet it's easy and light!
Ingredients
500 ml water
120 g sugar
40 g honey
30 g glucose syrup
2 g locust bean gum
150 g dark chocolate (drops or chopped pieces)

Mix preparation time 20 minutes
For 750 g of sorbet
In a saucepan, combine the water, sugar, honey, glucose, and locust bean gum. Heat the mixture until it’s just about to boil, blending thoroughly with an immersion blender to emulsify.
Remove from heat, add the dark chocolate (drops or chopped), and blend again until the mixture is completely smooth and homogeneous.
Let the mixture cool completely.
Pour into your ice cream machine and churn until the sorbet reaches the ideal consistency.
